Spicy Vegetarian Burritos Recipe (My Fajitas Blend)

Ingredients
  1. 2 cups of mixed basmati and wild rice, cooked
  2. 1 lime
  3. Small handful of fresh coriander
  4. 1 onion, finely chopped
  5. 2 cloves garlic, finely sliced
  6. 1/2 Green chilli, finely sliced
  7. 400g black beans (1 tin), drained
  8. 1-2tsp fajita blend (depending on heat levels)
  9. Tortilla wrap
  10. Cheese, grated to serve
Instructions
  1. Cook the rice and drain (can use leftover rice)
  2. Add the zest and juice of the lime along with the coriander to the rice
  3. In a separate pan heat a little onion and gentle cook the onions until they soften, adding the garlic and chilli after a few minutes.
  4. Add the tin of black beans, cook for 5 mins, then add My Fajita blend and the rice and stir through
  5. Cook for a further couple of minutes to infuse the flavours
  6. Scatter on the grated cheese so it starts to melt
  7. Warm your tortillas and serve
Notes
  1. Great to serve with sour cream and salsa
