Prawn Winter Salad (Ras El Hanout)

A quick dinner packed with flavour. This offers a great source of protein combining sweet, spicy and sour notes.

Ingredients
  1. 250-300g Large Prawns
  2. 1tsp My Ras El Hanout Blend
  3. 1 Orange, cut into segments and removed from the skin into segments
  4. 1/2 Grapefruit, cut into segments and removed from the skin into segments
  5. 2 Large handfuls of your favourite salad leaves
  6. 1/2 Red onion, sliced
For the Dressing
  1. 3 tbsp Rapeseed or Olive Oil
  2. 1cm Grated ginger
  3. 1 tbsp Honey
  4. Juice of 1 lime
  5. pinch of salt
Instructions
  1. Combine the prawns and ras el hanout in a bowl and leave to marinate (anything from 20mins to 2 hours)
  2. Prepare all the salad elements and combine in a separate bowl
  3. Combine all the dressing ingredients and pour over the salad, mix through
  4. Heat a little oil in a pan, add the prawns and cook for around 5 minutes, keep moving them to prevent them from sticking or drying out
  5. Divide the salad into 2 bowls and add the prawns on top
Notes
  1. Can be served with some fresh bread for a carb element
