Spicy Veggie Pasta Recipe (Ras El Hanout Blend)

  1. 2 Onions finely sliced
  2. 3 Cloves of garlic, crushed
  3. 1 Carrot finely sliced
  4. 1 Red pepper sliced
  5. 1 Yellow Pepper sliced
  6. 800g Red or Green lentils (two cans) rinsed
  7. 100g Fresh tomatoes roughly chopped
  8. 400g chopped tomatoes (1 can)
  9. 2 tsp Oregano
  10. 2 tsp My Ras El Hanout Blend
  11. 100g Mascarpone
  12. 100ml Red wine
  13. Cheese to serve
  14. 300g Spaghetti or pasta
  1. Heat oil in a large pan and add the onions and carrots, gently cook for 5 minutes to soften
  2. Add the garlic and continue to cook for a further 5 minutes
  3. After 10 minutes they should have softened, add the peppers, tomatoes, 2 tsp oregano, Ras El Hanout spices, red wine and lentils, stir through and bring to the boil
  4. Turn down to a simmer, taste and add more Ras El and oregano if required
  5. Leave to simmer for 15 minutes, stirring regularly so it doesn't stick
  6. After 10 minutes, get your spaghetti on the boil for 10 minutes
  7. Add the Mascarpone and stir through, leave for 5 more minutes
  8. Drain off the spaghetti, add to the sauce and stir through
  9. Serve and garnish with grated cheese of your choosing
  1. You could remove the mascarpone and make it fully vegan
  2. Great with a fresh leaf salad, simply squeeze some lemon, olive oil and lime to give it some zing!
