Tikka Masala Curry Recipe
Make an authentic Tikka Masala with this delicious and simple recipe. Using only a handful of fresh ingredients you can make a really tasty curry

Cook Time: 40 minutes
INGREDIENTS
4 chicken breasts or thighs cut into 2cm cubes allowing them to be skewered
1 onion diced
2-3 cloves of garlic crushed
1-2cm fresh ginger finely sliced
3 tsp Tikka Spice Blend
400g chopped tomatoes
1tbsp tomato puree
1 tbsp Olive Oil
40g butter
3 tbsp natural yoghurt
200ml double cream
1/2 lemon
INSTRUCTIONS
Place the cubed chicken into a bowl with the natural yoghurt and 1.5 tsp Tikka Spice Blend, mix together and leave to marinade for as long as possible (ideally 1 hour)
Heat your grill to high
Place the chicken onto skewers and place on the grill tray, they will only need around 8 minutes cook to get a good char on them.
Start the curry sauce before you put them in the grill. Put the chicken in whilst your onions are softening
Place a heavy pan on the hob and heat the oil and half the butter, add the onions and soften for a couple of minutes
Add the ginger and garlic, continue to soften and if they start to stick add a little water. This should take around 10 minutes.
Add 1tsp Tikka Spice Blend and stir for a minute before adding the chopped tomatoes and tomato puree and stirring through
Bring to a simmer and at the same time you can get your chicken out and leave it to rest slightly
This is a good time to get your rice on as you have around 10 minutes until it should all be ready to serve
The sauce should be thickening, add the 1/2 tsp Tikka Spice Blend along with the double cream, other half of butter and the chicken for the final 5 minutes along with a good squeeze of lemon juice
Cook for 5 minutes and serve with rice and naan bread
