Spicy Vegetarian Burritos Recipe (Fajita Blend)
Utilising a great suggestion from one of our customers. A really tasty and simple recipe, healthy and protein filled. Using fresh ingredients for a balanced meal

Cook Time: 20 minutes
INGREDIENTS
2 cups of mixed basmati and wild rice, cooked
1 lime
Small handful of fresh coriander
1 onion, finely chopped
2 cloves garlic, finely sliced
1/2 Green chilli, finely sliced
400g black beans (1 tin), drained
1-2tsp Fajita blend (depending on heat levels)
Tortilla wrap
Cheese, grated to serve
INSTRUCTIONS
Cook the rice and drain (can use leftover rice)
Add the zest and juice of the lime along with the coriander to the rice
In a separate pan heat a little onion and gentle cook the onions until they soften, adding the garlic and chilli after a few minutes.
Add the tin of black beans, cook for 5 mins, then add Fajita blend and the rice and stir through
Cook for a further couple of minutes to infuse the flavours
Scatter on the grated cheese so it starts to melt
Warm your tortillas and serve
SERVING SUGGESTIONS
Great to serve with sour cream and salsa
