Fajitas Recipe
A Mexican classic, providing a tasty. one pan dinner with little prep but maximum flavour! This is packed with protein and healthy vegetables. It can be prepared the night before or 15 minutes before cooking.

Prep Time: 10 minutes
Cook Time: 15minutes
INGREDIENTS
2 chicken breasts (1 per person)
1 red onion
1 red pepper (can add yellow as well)
A lemon or lime
2 tsp of Fajita Spice Blend
Tortilla wraps
Yogurt and salsa for serving
INSTRUCTIONS
Cut the chicken into strips
Slice the onion and peppers (not too thin for the peppers as it’s nice to have some crunch)
Add chicken, onion and peppers to a bowl and season with the Fajita blend, squeeze the lemon juice over all ingredients, mix well and leave for an hour
COOKING
Ideally use a griddle pan (but don’t worry a normal frying pan is okay)
Turn the heat on high and get the pan really hot (it shouldn’t need oil as it is about cooking it quick and getting a good char on it)
Add all the ingredients into the pan, leave them to settle for a minute and then start to turn to prevent too much sticking.
Cook for around 8-10 mins. Check the chicken is fully cooked before serving
Serve on tortilla wraps with yogurt and salsa
SERVING SUGGESTIONS
Natural yogurt compliments it well
Also guacamole and salsa
