Adobo Star Pasta with Halloumi Recipe
A Delicious mini pasta one pan dish with flavours of Latin cuisine. Warmth, earthy and saltiness flavours can be enjoyed throughout this Adobo Star Pasta with Halloumi Recipe.

Cook Time : 30 minutes
Ingredients:
- 1 tbsp Olive Oil
- 6-8 Mushrooms (your choice) finely diced
- 2 Carrots, peeled and finely chopped
- 3 Garlic Cloves, crushed
- 400ml Vegetable Stock
- 400ml Water
- 1 Onion, finely diced
- 1 Green Pepper, roughly diced
- 1 tbsp Tomato Puree
- 1 1/2 tsp Freshly Spiced Adobo Spice Blend
- 1 400ml Can of Canellini Beans
- 1 Pack Halloumi
- 250g Star Pasta or small pasta
- Handful Fresh Basil
- Parmesan to serve
Instructions :
Place a large pan on a medium heat, add oil, onion, mushrooms, peppers and carrots, soften for around 8 minutes, stirring occasionally.
Once they start to soften add the garlic and the Freshly Spiced Adobo Spice Blend. Stir through to coat everything in spice. Add the tomato puree and canellini beans before pouring in the stock and pasta, stir well and bring to a simmer.
It will likely need around 10-15 minutes for the pasta to cook and during this time you will need to monitor the water levels and top up accordingly using the extra 400ml water (please refer to pasta packaging for a more accurate cook time and taste throughout).
Whilst this is cooking place a small frying pan on a medium heat, add a little oil and place the sliced halloumi to grill. Gently cook for about 2 minutes each side or until they show signs of browning. Set aside until the pasta is almost cooked.
Once the pasta is almost cooked add the slices of halloumi, stir through and scatter over the basil.
