This is a great way to use courgettes. Cut down on the carbohydrates to use half the amount of pasta but still with same texture and flavours to create a delicious Courgette Feta and Spaghetti Recipe.

INGREDIENTS
2 Courgettes – Spiralled
150g Feta Cheese, cubed
2 tbsp Olive Oil
1 tsp Salt
1 tsp Freshly Spiced Adobo Spice Blend
1 Onion Finely Diced
3 Garlic Cloves Crushed
100g Fresh Vine Tomatoes Halved
1 tsp Dried Oregano
Small Handful Fresh Basil
150g Fresh Pasta
400g Can Chopped Tomatoes
INSTRUCTIONS
In a large saucepan add the oil, place on a medium heat and add the onions. Soften for 8 minutes, before adding in the garlic for another couple of minutes. Stir in the Freshly Spiced Adobo Spice Blend and dried oregano, followed by the fresh tomatoes and chopped tomatoes. Cook for 15 minutes, season with extra salt to taste.
Whilst this is cooking, in another saucepan cook your fresh pasta as per the instructions. Usually 3-4 minutes in boiling water, drain and set aside.
Once the sauce has thickened, stir in the courgettes. Cook for a few minutes before adding the cubed feta cheese. Allow to cook for around 3 minutes to allow most of the feta to melt into the sauce. Stir in the cooked pasta and serve topped with fresh basil.
