Do something different with your BBQ and give our Peri Peri Prawn Skewers a try. Marinate for at least an hour, 5 mins prep, 5 mins to cook, super simple and delicious. 

Serves 2
Time: 30 minutes*

Ingredients:
200g Large fresh King Prawns
1 tsp Freshly Spiced Peri Peri Spice Blend
1 tbsp Olive Oil
Handful Fresh Coriander Finely Chopped
Parmesan Cheese Grated
1 Onion cut into chunks

*If using wooden skewers, make sure you soak them in water for 30-60 mins.

Drizzle
10 Fresh Mint leaves finely chopped
Olive Oil 
Salt 
Lemon

Instructions
Place the fresh prawns in a bowl, drizzle over the olive oil, Peri Peri Spice Blend and Coriander. Mix today and leave overnight if possible, or at least 1 hour to marinate. 

Drizzle
Place a large handful of fresh mint in a pestle and mortar with the salt, lemon juice and olive oil. Grind into a paste, season to taste. 

If using wooden skewers, make sure you soak them in water for 30-60 mins.

Heat up your BBQ or grill, skewer the prawns place chucks of cut onion between them. 

Cook on the BBQ for around 3-4 minutes each side, make sure they are cooked through.
Serve with grated parmesan and the coriander and lemon drizzle.
