Leftover Turkey Stew (Indian Egg Blend)

Turkey Stew Recipe

Great to spice up leftover Christmas Turkey. A one pan dish that’s quick and easy to assemble. This is a great way to use up Turkey but totally change’s the flavour.


Serves 2
Prep Time: 10 minutes
Cook Time: 35 minutes

INGREDIENTS
1 onion-  finely sliced
1 carrot- sliced
2 garlic cloves- crushed
2  tsp Indian Egg Spice Blend)
1 400ml tin tomatoes
1 400ml chickpeas
250g-300g leftover Turkey (depending how much you want)
Coriander to garnish

INSTRUCTIONS
If you are using fresh diced turkey, cook this first and then remove and leave on one side
Add oil to a pan, place on a medium heat.
Add the onion, garlic and carrot to the pan and soften for 8-10mins
Add 1 1/2 tsp Indian Egg Spice Blend, stir through
Add the tomatoes and chickpeas, stir everything together and bring to a boil. Reduce to a simmer for 15-20 mins until the vegetables are tender.
Add 1/2 tsp more Indian Egg Spice Blend
Add the Turkey (as it is already cooked it just needs warming through for around 5 mins) ensure it is fully heated.
Garnish with fresh coriander

SERVING SUGGESTIONS
Serve with yoghurt- why not try adding some Garam Masala to yoghurt for a healthy flavoured yoghurt.
Small flatbreads go well too.
