Spicy Berbere Eggs Recipe
This is great as a healthy vegetarian lunch or a warming easy dinner. Using a handful of fresh ingredients and enhanced with our Berbere Spice Blend.
Serves 2
Prep Time: 15 minutes
Cook Time: 20 minutes
INGREDIENTS
1 Onion finely diced
1-2 Garlic cloves crushed
1 Red pepper finely diced
300g Fresh tomatoes roughly chopped (you can use a tin of chopped tomatoes for ease)
1 tsb Berbere Spice Blend
50g Grated cheese
4 Eggs
Olive Oil
A few sprigs of fresh coriander to garnish“
Optional: Fresh Bread to serve
INSTRUCTIONS
Heat some olive oil in a large frying pan, add the onions and soften for a couple of minutes before adding the red pepper and garlic
Continue to cook for around 8 minutes and then add the chopped tomatoes and the Berbere Spice, stir through to coat the ingredients with the spice
Cook for a further 5 minutes, if it starts to stick add a little water
Add in the grated cheese and stir through, this adds a creamy taste and texture to the recipe
At this stage get another frying pan on the heat with a little oil and fry your eggs
Dish up the sauce/stew and place the eggs on top with a pinch of Berbere on top of the eggs and the fresh coriander sprinkled over
