Looking for some healthy dinner ideas!? This Brazilian Fish Stew is a tasty, healthy meal that’s easy to make. Lots of fresh ingredients and deep spices for a great family meal.

INGREDIENTS
300g White Fish – Cod or Sea Bass
1 tbsp Olive oil
1 Red onion finely chopped
1 Large carrot, peeled and cut into 1cm cubes
1 Red Pepper roughly chopped
4 Garlic cloves crushed
2 tsp Tomato puree
2 tsp Freshly Spiced Bahian Spice Blend
200ml Vegetable stock
Handful of fresh tomatoes roughly chopped, approximately 100g
200ml Coconut Milk (1 can)
1 Lime
Freshly coriander finely chopped
INSTRUCTIONS
Place a large saucepan on a medium heat, add the oil, onions and carrots and soften for 8-10 minutes. Add the pepper, garlic and Bahian Spice Blend, stir through and add a dash of water to prevent sticking.
Now add the stock, tomato puree, squeeze in half the lime juice and the can of coconut milk, simmer for a couple of minutes to thicken slightly. Add the fish and fresh tomatoes and simmer for a further 15 minutes. Check the fish is cooked through and the sauce has thickened, you may need an extra 5-10 minutes. Add the remaining lime juice and a sprinkle of coriander to serve. Great with rice or fresh bread.
