We love this recipe for a healthy and tasty lunch or snack. This Harissa Courgette Fritters Recipe uses only a handful of fresh ingredients plus our Harissa Spice Blend for a truly tasty meal.

INGREDIENTS

2 Large Courgettes, grated
130g Plain flour
2 Eggs
1 1/2 tsp Freshly Spiced Harissa Spice Blend
50g Natural yoghurt
50g Cheese, grated (we used mature cheddar)
2 tbsp Vegetable oil
4 Eggs to poach
Extra natural yoghurt and Harissa spice for serving
Handful of fresh coriander

INSTRUCTIONS
Preheat your oven to 180C.

Grate the courgettes and press between muslin or tissue to remove excess water.  Add the courgettes, flour, harissa spice, yoghurt and grated cheese in a bowl. Add two eggs and mix everything together, season with a little salt. Make sure the consistency is smooth but not too wet, if it is, add a little more flour.
Heat the vegetable oil in a large frying pan.  Once place a large spoonful of the courgette mixture in the pan, leave enough room for it to separate, cook for around 2 minutes before flipping over.
Line a baking tray with baking parchment.  Once the courgette fritters are sealed (5 mins in the pan), remove and place on the tray.
Cook in the oven for 10 minutes.

With 5 minutes cooking time remaining, poach your eggs and combine some yoghurt with a tsp of Harissa Spice and stir.

Serve the cooked courgette fritters, topped with the poached eggs harissa yoghurt mixture.
