A great healthy lunch or dinner. This Harissa Noodle Salad Recipe is easy to assemble and you can top with a variety of different proteins to suit your taste.

INGREDIENTS

1 Mango, peeled and cut into 1cm cubes
1 Carrot, peeled and shredded
100g Tomatoes, halved
1/2 Green Pepper, cut into long strips
Approximately quarter of a Cucumber, shredded
1 Lime, juice only
Fresh Coriander – cut finely
100g Noodles – dry or fresh
Small Handful of Peanuts (Not salted)
2 tbsp Soy Sauce
2 Garlic cloves crushed
1 tsp Sugar
1tsp Freshly Spiced Harissa Spice Blend

INSTRUCTIONS
Place the garlic, sugar, spice, 1 tbsp soy sauce and lime juice in a bowl and stir to combine. Leave to one side.
Cook the noodles as per the pack instructions. We used dry noodles and simply boiled them for 3 minutes.
Whilst the noodles cook, add the mango, carrot, tomatoes, green peppers, cucumber, peanuts in a large bowl. Mix together. Now drizzle your spicy soy sauce over the fruit and vegetables and add the noodles. Mix well and serve.
We have topped ours with some freshly cooked King Prawns and used 1tbsp of soy sauce to flavour them.
