Dukkah Chicken Recipe
This Dukkah chicken and roasted vegetable recipe is packed with flavour. It takes minutes to prepare and will be ready within the hour, providing the whole family a tasty meal.

Prep Time: 10 minutes
Cook Time: 40 minutes
INGREDIENTS
4 chicken breasts
1 Red onion cut into segments
1/2 Yellow pepper sliced
1/2 Red pepper sliced
Around 8-10 baby carrots, depending on how many you want. If they are larger cut them in half to ensure an even cook
3 tsp Dukkah Spice Blend
Olive Oil
400g Chickpeas (1 tin)
1 tbsp honey
Feta to garnish
Salad and favourite bread to serve
INSTRUCTIONS
Heat the oven to 200C
Place the onion, carrots and peppers on a baking tray and bake for around 10 minutes
Whilst they are cooking sprinkle each chicken breast with a little of the Dukkah spice blend
Remove from the oven and add the chickpeas. Sprinkle some Dukkah over the vegetables and place the chicken on top
Drizzle with the olive oil and honey
Return to the oven and bake for 20-25 minutes, the vegetables should be tender and the chicken cooked through.
Remove from the oven and dish up the vegetables
Slice the chicken and place on top of the vegetables, crumble the feta on top
SERVING SUGGESTION
Great with a simple salad, fresh bread and a beer!
