This recipe is so simple but tastes like its taken much longer to put together.
Serves 3
Prep Time: 10 minutes
Cook Time: 20 minutes
INGREDIENTS
3 chicken breasts or thighs
1 red onion roughly chopped into quarters
2 cloves of garlic crushed
2 tsp Za’atar Spice Blend
1 lemon sliced
Olive Oil
A small handful of fresh coriander
INSTRUCTIONS
Pre-heat your oven to 200C
Place the chicken in an oven proof dish and cover in the Za’atar and garlic, drizzle over olive oil. Rub in to ensure it is all coated.
Scatter the red onion around the chicken in the dish
Squeeze some of the lemon juice over the chicken and then place the lemon slices throughout the dish
Pour a few glugs of olive oil over, don’t worry if it seems a lot. It will keep the chicken really juicy.
Scatter the coriander
Place in the oven and cook for 20 minutes, checking the chicken is cooked through before serving
Great to serve with rice and a salad
Optional sprinkling of pine nuts over salad and chicken
We absolutely love this blend!! I sprinkle on fish before cooking in foil with lemon juice and recently I’ve added it to breadcrumbs and coated mini chicken fillets, yummy!!
