Courgette and Pistachio Cake

This Adobo Chicken Bake Recipe is one of our go to dishes the whole family likes, it takes less than an hour to prep and cook, packed with flavour and healthy ingredients using our Adobo spice blend. 

Serves 4
Time: Prep: 15 minutes  Cook: 35 minutes

Ingredients:
1 tbsp Olive Oil
3 tsp Freshly Spiced Adobo Spice Blend 
8 Chicken Thighs cut in half, skin removed
1 Onion finely chopped
1 large pepper roughly chopped
4-5 Pineapple rings cut into chunks (around half a can of pineapple)
4 Garlic cloves crushed
1 tsp Freshly grated ginger
1 400g can chopped tomatoes
1 tbsp Soy sauce
1 400g Can chickpeas

Instructions
In a bowl combine the chicken thighs with 2 tsp Adobo Spice and mix to coat. You can add a little oil to help it stick and marinate. 

Preheat over to 200C
Meanwhile place a large pan on a medium heat, add the oil and then the marinated chicken and sear for 3-5 minutes on each side until it starts the brown. 
Place the chicken in a large ovenproof dish

Now add the onions and peppers to the pan you had the chicken in and soften for 5 minutes before adding in the garlic, ginger and pineapple chunks. Stir for a couple of minutes

Add this onion and pepper mix to the ovenproof dish with the chicken, top with the chopped tomatoes, soy sauce, a large handful of fresh coriander finely chopped, chickpeas and a little extra salt to season. Stir everything together and place in the oven. 

Bake for 30-35 minutes stirring around half way through that time. Check the chicken is cooked.

Remove from the oven and rest for a couple of minutes before serving with rice or a warm flatbread and some natural yoghurt.
