These Cheese Stuffed Flatbreads with Za’atar Recipe is really simple to make, you can tweak it to add different herbs or change the cheese to your taste. Plus there is nothing better than making your own bread with only a few fresh ingredients.
Makes 8 Flatbreads
Time: 15 Minute Prep + 1 Hour to prove and cook
Ingredients:
500g Plain flour or Sourdough Flour
2 tbsp Olive Oil
1/2 Tsp Salt
2 1/2 tsp Fast Acting Yeast
200ml Luke Warm Water, Plus extra olive oil for sealing each flatbread.
Filling & Topping
Feta Cheese
15-20g Freshly Spiced Za’atar Spice Blend
3 Tbsp Olive Oil

Instructions
Mix the flour, yeast, and salt until combined. In a Food Mixer fixed with a dough hook, add water, olive oil, and dry ingredients. Mix the dough for 4-6 minutes until it likens elastic and pulls away from the sides of the bowl. You can do this by hand if you don’t have a mixer. Cover the bowl with cling film, and store in a warm place until the dough doubles in size.
Mix the za’atar and olive oil in a small bowl with a pastry brush, set aside.
Portion the dough into 8 and form small balls, press them out with your hands and use a rolling pin to form a round thin shape.
Crumble feta cheese in the centre of the dough and sprinkle a little Za’ater in as well. Drizzle a line of olive oil around the edge and then folder in all the edges to the middle to seal. Flatten with the palm of your hand.
Place a large pan on a medium heat and add 1 tbsp olive oil Place the flatbreads in the pan and cook for 3-5 minutes each side. Do not let them burn. Using a brush, cover the flat side with the za’atar and oil mix you made earlier. Once cooked leave to rest for 5 minutes before serving with a salad or as an accompaniment to a BBQ.
