Looking for some new salad ideas, try this Middle Eastern Salad with Dukkah recipe. It is packed with fresh vegetables and herbs giving refreshing notes from mint and then topped with a poached egg and our freshly ground Dukkah Spice Blend for earthy, nutty flavour and crunch.

Cook Time: 5 minutes
INGREDIENTS
2 Eggs
80g Fresh Tomatoes roughly chopped
1 Avocado
Mozzarella
Handful of Fresh Dill finely chopped
8-10 Mint leaves finely chopped
1 tbsp Olive Oil
1/2 Cucumber chopped into 1cm pieces
INSTRUCTIONS
In a large bowl add the chopped tomatoes, cucumber, dill and mint, mix together and set to one side
Bring a pan of water to the boil and crack in the eggs, poach for 5 minutes
Whilst the eggs are cooking slice the avocado and mozzarella and then add to the salad bowl, pour in the olive oil and season the salad with salt and pepper
Dish up the salad into two bowls, top with a poached egg before scattering a tsp of Freshly Spiced Dukkah Spice Blend over the top
