Courgette and Pistachio Cake

North African Infused Smokey Lentil Stew Recipe. Deep, warming flavours with subtle heat and fresh herbs for a delicious meal. Using our freshly ground Harissa Spice blend. 

Serves 4
Time: Prep: 15 minutes  Cook: 25 minutes

Ingredients:
1 tbsp Olive Oil
2 Celery Sticks finely diced
2 Carrots, Peeled and finely diced
1 Large Onion, Finely diced
3 Garlic Cloves crushed
1 1/2 tsp Freshly Spiced Harissa Spice Blend
1 1/2 tbsp Balsamic vinegar
150g Red Lentils, rinsed
900ml Vegetable Stock
Salt and Pepper to season
Fresh Coriander finely chopped
Parmesan Cheese to finish

Instructions
Place a large pan on a medium heat and add the oil, add the onion, carrot and celery, soften for 10 minutes.
Add the garlic and cook for a couple of minutes.

Stir through the Freshly Spiced Harissa Spice Blend and balsamic vinegar, a splash of water if it is sticking.
Pour in the lentils, stock and then season. 
Bring to the boil, before reducing to a simmer.
Cook for 10-12 minutes until the carrots are soft. Stir through the coriander. 

Serve with grated parmesam for a warming lunch or dinner.
