A simple yet delicious smoky tomato soup using our BBQ spice blend for natural heat and depth of flavour. Great for batch cooking healthy lunches.

 

Serves 4
Time: 30 minutes

Ingredients:
1 Brown Onion, finely diced
3 Garlic cloves, crushed
1 tbsp Olive Oil
1 Can Chopped Tomatoes
1 tsp Freshly Spiced BBQ Spice Blend
400ml Veg Stock
Handful Fresh Basil leafs, tear into pieces
100ml Single cream ( optional )
Spring onion finely chopped to scatter when serving ( optional) 

Instructions

Place a large pan on a medium heat, add a tablespoon of olive oil, followed by the onions and saute for 7-8 mins. You can add a dash of water if they start to stick. You are looking for transluecent onions.
Add the Freshly Spiced BBQ Spice Blend and stir before pouring in the chopped tomatoes , stock and salt to taste.

Leave to simmer away for 20 minutes, stirring occasionally.

Scatter in the basil and cream, stir and cook for 5 more minutes. You can serve as this is but it will be a chunky soup.

We advise to use a food blender and add the soup in stages, blitz until smooth.

Serve with a little more fresh basil and some finely chopped spring onions along with your favourite fresh bread, or even a slice of cheese on toast
