Black Bean Fajita Recipe

Try this Black Bean Fajita Recipe as a midweek treat the whole family will enjoy.

Serves 4
Time: 15-20 minutes (up to an hour to marinate)

400g Can Black Beans
1-2 tsp Freshly Spiced Fajita Spice Blend
Red Pepper, Finely Sliced
Red Onion, Finely Sliced
Lime, Juice Only
2 Garlic Cloves,Crushed
1tbsp Olive Oil
Handful of Fresh Coriander,Finely Chopped
4-8 Tortilla Wraps
100g Grated Cheese

Optional toppings
200ml Sour Creme (optional)

Quick Guacamole
2 ripe Avocado’s, cut in half, stone removed and inside scooped out
2 Garlic cloves, crushed
Lime, Juice Only
Olive Oil
Salt & Pepper
Small handful of Fresh Coriander, Finely Chopped

Instructions
In a large bowl, place the chopped onion, pepper, garlic, black beans, juice of 1 lime, Freshly Spiced Fajita Spice Blend and a drizzle of olive oil. Mix together to ensure everything is well coated with fajita spice. If you don’t want it too spicy lean closer to 1tsp to start with.  Leave to marinate for an hour if possible, but 15 minutes will be fine.

If making the quick Guacamole, mash the scooped out avocados using a fork until you have a smoother consistency, add in the remaining ingredients of the guacamole apart from salt and pepper and mix together, taste and season with salt and pepper. Set aside in a bowl ready for serving

In another bowl add the Sour Creme. This makes dishing up much easier to have everything to hand.

Place a large frying pan on a high heat. Add 1tbsp Olive Oil.  Once the oil has heated, pour in all of the ingredients that have been marinating. You want a fast cook so ensure the heat is high to allow a slight char on the peppers. Season with salt. You should only need to cook the mix for around 10 minutes until the onion and peppers have softened.

Place a small frying pan on a medium heat, add a drizzle of olive. Warm the tortilla wraps through, around 1 minute per side is usually enough but check the packet of the ones you have.

Serve up, tortilla, topped with black bean fajita mix, quick guacamole and sour creme and finally the grated cheese to slightly melt on the warm mix.
