Tofu Salad Recipe

A simple lunch, packed with protein and vibrant flavours from our natural Za’atar blend. Whilst we have used Tofu it can easily be altered to Chicken, Turkey, Quorn or even Chickpeas.
This offers a much lighter lunch option and carb free if you leave out the pitta bread.

Prep Time: 10 minutes
Cook Time: 10 minutes

INGREDIENTS
300g Tofu
1 1/2 tsp Za’atar Blend
Large Handful of salad leaves
2 sliced Radish’s
2 spring onions chopped
5cm Cucumber chopped
Half Red pepper sliced
2 Pitta Breads
1tsp Tahini (optional) 

INSTRUCTIONS
Coat the tofu in the Za’atar Blend with a little olive oil
Add to a frying pan with over a medium heat for 5-10 minutes until lightly coloured
In the meantime, combine all the salad ingredients in a bowl and lightly season
Lightly toast the pittas and cut in half
Serve the tofu on top of the salad and drizzle with a little tahini

Can also squeeze some lemon juice over
