Spice infused eggs recipe

Ingredients
  1. 4 Eggs (2 per person)
  2. 1 onion
  3. 1 red pepper
  4. 2 tsp of My Spice Infused Scrambled Eggs blend
  5. Handful of tomatoes (any tomatoes will do)
  6. Handful of fresh coriander
  7. 3 cloves of garlic
  8. 1 small chilli (preferably red)
  9. flatbreads, chapattis or toast to serve
Instructions
  1. Finely slice the onion
  2. Crush the garlic
  3. Roughly chop the pepper and tomatoes
  4. Finely chop a handful of coriander
  5. Crack eggs into a bowl, season with a little salt and pepper and whisk a little
Cooking
  1. Heat olive oil in a frying pan
  2. Add the onion, garlic and chilli, fry until soft (around 8-10 mins)
  3. Add the spice blend, stir for 1 minute
  4. Add the tomatoes and cook for a further 5 minutes
  5. Add the eggs and half of the coriander
  6. Leave them for 30 seconds- 1 minute and then begin to scramble
  7. Once scrambled garnish with the remaining coriander

  2. Serve on warm Flatbreads, Chappatis or Toast
