Prawn Winter Salad Recipe (Ras El Hanout Blend)
A quick dinner packed with flavour. This offers a great source of protein combining sweet, spicy and sour notes.

INGREDIENTS
250-300g Large Prawns
1tsp Ras El Hanout Blend
1 Orange, cut into segments and removed from the skin into segments
1/2 Grapefruit, cut into segments and removed from the skin into segments
2 Large handfuls of your favourite salad leaves
1/2 Red onion, sliced
For the Dressing:
3 tbsp Rapeseed or Olive Oil
1cm Grated ginger
1 tbsp Honey
Juice of 1 lime
pinch of salt
INSTRUCTIONS
Combine the prawns and Ras el Hanout in a bowl and leave to marinate (anything from 20mins to 2 hours)
Prepare all the salad elements and combine in a separate bowl
Combine all the dressing ingredients and pour over the salad, mix through
Heat a little oil in a pan, add the prawns and cook for around 5 minutes, keep moving them to prevent them from sticking or drying out
Divide the salad into 2 bowls and add the prawns on top
Can be served with some fresh bread for a carb element
