Serves 4
Time: 15 minutes

Ingredients:
4 Eggs
1 200g Pack Fresh Mozzarella Tore into small bite sized pieces
150g Natural Yoghurt
1 Lemon Juice only
1tsp Freshly Spiced Harissa Spice Blend
200g Fresh Tomatoes cut into halves
Olive Oil
1/2 Red Onion cut into thin slices
Freshly Coriander finely chopped
1 tsp Salt
Favourite Fresh Loaf to serve

Instructions

In a small bowl combine the chopped coriander leaves, 2 tbsp olive oil and a pinch of salt, stir and leave to one side.

In another bowl combine the yoghurt, Harissa spice blend and Lemon, stir together to make sure the flavours are full combined.

In a large serving bowl scatter the chopped tomatoes and red onion slices, drizzle over the yoghurt mix, leaving a little to one side.

In a frying pan, cook the eggs, place them in the bowl with the tomatoes and onions. Drizzle the remaining yoghurt and all of the coriander dressing. Salt to taste and serve with your favourite bread.
