This Cajun Chickpea wrap recipe is a great lunch option, can be made in advanced or enjoyed warm within 10 minuites.
Serves 2
Time: Prep: 5 minutes Cook: 10 minutes
Ingredients:
1 tbsp Olive Oil
2 tsp Cajun Spice Blend
1/2 Onion finely chopped
1 Red Pepper chopped
1 Can Chickpeas
2 Garlic cloves crushed
3 Spring onions finely chopped
1 Lime juice
Small handful fresh coriander
2 Good quality wraps or flatbreads
60g Feta cheese cubed
Instructions
Place a large frying pan on a medium heat, add the oil, onion and peppers, soften for a couple of minutes before adding the garlic, chickpeas, Cajun spice blend and a sprinkle of salt.
Cook for another 5 minutes. Squeeze in the lime juice and coriander.
Warm your flatbreads/ wraps and spoon the cajun chickpea mix into the wraps, top with the chopped spring onions and feta cheese.
You could swap out the cheese for a spoonful of natural yoghurt.
