The Ultimate Za’atar-Infused Stone-Baked Pizza

Bring a vibrant Middle Eastern twist to your next pizza night! This recipe elevates a classic homemade thin-crust dough by infusing our aromatic Freshly Spiced Za’atar blend directly into the base, creating a beautifully herbaceous and savoury crust. Topped with rich passata, melted mozzarella, and an extra dusting of Za’atar right before baking, it delivers an incredible depth of flavour that perfectly complements the golden, bubbling cheese. Simple, rustic, and packed with spice!

Ingredients:

For the Za’atar Pizza Dough:

  • 350g strong white bread flour (plus extra for dusting)

  • 1 sachet fast-action dried yeast

  • ½ tsp caster sugar

  • 1 tsp Freshly Spiced Za’atar Spice Blend

  • 200ml warm water

  • A large pinch of salt

For the Base & Toppings:

  • 100g passata

  • 1 tsp dried oregano

  • 1 tsp Freshly Spiced Za’atar Spice Blend (for scattering)

  • Pizza toppings of your choice (we love fresh mozzarella chunks and fresh basil leaves to match the photo!)

Instructions

Step 1: Prepare & Infuse the Dough

Tip the strong white bread flour into a large bowl, then stir in the yeast, caster sugar, and 1 tsp of Freshly Spiced Za’atar. Making a well in the middle, tip in 200ml of warm water and a large pinch of salt. Mix using a wooden spoon until all the flour has been fully incorporated and you have a soft dough.

Step 2: Knead & Rest

Turn the dough out onto a lightly floured surface and knead for 5 minutes until smooth and elastic. Tip back into the bowl, cover with a clean tea towel, and set aside to rest for 5 minutes. (Note: You can leave the dough to rise further if you have extra time, but it’s not required for a beautiful thin crust.)

Step 3: Prep the Oven & Build your Pizza

Heat the oven to 240°C / 220°C fan / gas mark 8. Put a pizza stone, sturdy baking sheet, or an upturned baking tray on the top shelf of the oven to heat up thoroughly. Mix your passata with the 1 tsp of dried oregano in a small bowl.

If you’ve left the dough to rise, divide it into two equal balls. Roll one of the balls out on a floured surface into a large circle using a rolling pin, then lift it onto a floured baking sheet.

Step 4: Season & Bake

Spread half of the herbed passata over the base, scatter over your fresh mozzarella and chosen toppings, and evenly dust with the remaining 1 tsp of Freshly Spiced Za’atar straight over the toppings. Carefully slide the pizza from the baking sheet straight onto the hot stone, sheet, or tray in the oven. Bake for 8–10 minutes until the topping is bubbling and the base is perfectly crisp. Remove from the oven and repeat with the second ball of dough.
