INGREDIENTS
For the Meatballs
1 tbsp Olive Oil
500g Minced Beef/ Lamb or Veggie Mince
50g Breadcrumbs
1 Egg, cracked and whisked
1 tsp Freshly Spiced Harissa Spice Blend
Fresh Coriander finely chopped
1/2 Onion finely chopped
For the Sauce
Olive Oil
1/2 Onion finely sliced
3 Garlic Cloves crushed
1 tsp Freshly Spiced Harissa Spice Blend
400g Chopped Tomatoes
400g Chickpeas
Fresh Coriander finely chopped
2-3 tbsp Natural Yoghurt
INSTRUCTIONS
Combine all the meatball ingredients and mix well (you can do this in a food processor). Make evenly sized meatballs from the mixture and place in the fridge for 30 minutes, or you can freeze and bring them out to cook when you need them.
Place a large frying pan or wide saucepan on a medium heat, add 1tbsp olive oil and add the meatballs, cook and ensure all have a nice browning. Set aside. Using the same pan, add a little more oil and then fry off the onion for a few minutes. Add the garlic, Freshly Spiced Harissa Spice Blend, chopped tomatoes and chickpeas. Stir and add 200ml of water to the pan. Cook for 15-20 minutes, stirring regularly. Season to your taste. Add the meatballs to the pan and cook for a further 2 minutes.
Serve with a scattering of fresh coriander and drizzle with fresh yoghurt.
This is great with couscous or fresh bread.
