Courgette and Pistachio Cake

Using two of our most popular spice blends. This Middle Eastern Salmon Bowl Recipe is super easy to put together. Full of flavour, healthy protein and fresh vegetables. Great for a lunch or dinner. 

Serves 2
Time: Prep: 10 minutes  Cook: 20 minutes

Ingredients:
1 tbsp Olive Oil
2 Salmon fillets
1 Large red pepper diced
2 Spring onions finely chopped
100g Frozen peas 
300ml Can Sweetcorn
3 Garlic Cloves crushed
1 1/2 tsp Freshly Spiced Za’atar Spice Blend
1 1/2 tsp Freshly Spiced Baharat Spice Blend
1 Lemon, juice only
Serve with rice 
Optional- 1 tbsp Tahini

Instructions
Place the salmon fillets in a bowl, drizzle a little olive oil over and 1/2 tsp Za’atar and 1 tsp Baharat. Squeeze in half of the lemon juice. Ensure and even coating, leave to one side.

Place a large pan on a medium heat, add 1 tbsp Olive Oil.
Soften off then peppers, spring onions for a couple of minutes before adding in the sweetcorn and garlic. Cook for a further minute before scattering in the remaining Baharat and Za’atar.

Now add in the salmon chunks to cook, as they are in smaller pieces it shouldn’t take more than 4-5 minutes per side. Squeeze in the remaining lemon juice 

Ensure everything is well mixed, at this stage you can drizzle over a tbsp of tahini before serving on a bed of rice.
