Spicy Fish Kofta Recipe (Tandoori Inspired Blend)

Fish Kofta Recipe

A tasty fish kofta, really healthy and packed with flavour! These are great as snacks throughout the week, offering a source of protein.Serves 2

Prep Time: 10 minutes
Cook Time: 10 minutes

INGREDIENTS

1 pack of Cod Fillets (around 300-400g)-cut into small cubes
Small handful of dill-finely chopped
Small handful of flat leaf parsley-finely chopped
1cm ginger-grated
2 garlic cloves- crushed
Zest of half a lemon
1 egg
1 slice of bread- blitz in food processor for breadcrumbs
1tsp Tandoori Spice Blend

INSTRUCTIONS
You can make this dish in two ways, one where you combine all the ingredients above in a bowl and using your hands mix together and mould into small round patties.
Alternatively, you could skip some of the prep above and put everything into a food processor and blitz but not too much as you still want some texture- again form into small round patties.

COOKING
Heat a hot griddle pan
Add a little oil to the Kofta’s and place onto the griddle on a medium heat
Cook for around 10mins, turning at least once to get an even cook

SERVING SUGGESTION
Great with rice and salad
Or get a pitta/flatbread and make a fish kebab
