Looking for a delicious, simply, tasty and healthy one pan dish?! This Baharat Shakshuka Recipe is a go to for lunch or dinner
Serves 4
Time: 30 minutes
Ingredients:
1 Onion or 2 Shallots, finely sliced
3 Garlic Cloves, crushed
1st Freshly Spiced Baharat Spice Blend
4 Medium sized mushrooms, finely diced
1 Red Pepper, Sliced
400ml Chopped Tomatoes
Handful of fresh Parsley and Coriander, finely chopped
4 Eggs
400ml Water
Salt to season
1tbsp Tomato Puree
200g Feta Cheese
Optional:
Fresh Bread to serve
Instructions
Place a large pan on a medium heat and soften the shallots/onions for 5 minutes before adding the garlic and peppers. Next, add the mushrooms and Freshly Spiced Baharat spice. Continue to stir and cook for a further 3 minutes.
Add the tomato puree with a dash of water, and stir well to coat all the ingredients, then add the chopped tomatoes. Use a wooden spoon to compress any big bits of tomatoes. Season with salt and half of the herbs. Add 400ml of water and allow to cook for around 5 minutes for the sauce to thicken.
Using the wooden spoon, make indents in the tomato mixture and crack your eggs into 4 separate areas. Place a lid on top of the pan and allow to cook for 3-5 minutes.
Check the eggs are cooked and then scatter the remaining herbs on top.
Serve and scatter over the crumbled feta equally between each serving. This goes great with fresh Sourdough
