Panch Phoron Potatoes Recipe

Serves 2
Prep Time: 10 minutes
Cook Time: 30 minutes

INGREDIENTS
400g Potatoes, peeled and diced into 2cm cubes
1tbsp Vegetable oil
3 tsp Freshly Spiced Panch Phoron
1 Onion finely chopped
3 Cloves of garlic crushed
1cm Piece of ginger finely sliced
1/2 Green chilli finely chopped
100g Chopped tomatoes
1tsp Freshly Spiced Poudre De Colombo Spice Blend or Freshly Spiced Garam Masala Spice Blend
100g Frozen peas

INSTRUCTIONS

In a heavy pan add the vegetable oil and bring to a moderate heat, add the Panch Phoron seeds and toast lightly, do not leave too long as they will burn, stir them to prevent this.
Once lightly toasted add in the onions, garlic, ginger and chilli and cook for around 10 minutes until the onions are soft.
Add the potatoes, Poudre De Colombo or Garam Masala and season with salt, stir through to coat the potatoes with all the spices.
Add the peas, tomatoes and enough water to cover the potatoes, then bring to a boil, reduce to a simmer and leave for 20 minutes with a lid on.
Go back every 5 minutes to stir and if the water level is getting low top up a little.
Check the potatoes are soft, if not add more water and cook for a few more minutes.
Serve topped with some fresh coriander

    Wow..Looks good..tastes good and because I didn’t use the oil..it does you good. The complexities of flavour is a first for me. I shall definitely make this again.
