Try our quick and easy cookie recipe to enjoy at home over the festive period or to give away as homemade sweet treats! You can modify the cooking time depending on whether you enjoy a soft cookie with a chewy centre or a crispy outer edge, there is no right or wrong way.
Pre heat the oven to 190C. Cream the butter and sugar until it is soft and pale in colour and light and fluffy. Add the flour, spice and chocolate chips and mix gently with a wooden spoon. When the mixture becomes stick bring the mixture together with your hands and form a ball of dough. You can freeze the dough at this point if you like.
Using your hands to roll the dough into golf ball sized balls and place them slightly apart from each other on a baking sheet (you don’t need to butter or line it). Flatten the balls a little with the palm of your hand and bake them in the oven for around 8-12 mins until they are golden brown and slightly firm on top. Leave the cookies on a cooling rack for around 15 mins before serving.
